About Teruyasu Fujiwara -Fujiwara is one of the most revered names in the world of Japanese knives. The Fujiwara family started as blacksmiths in 1870, first forging farm tools, then swords. Many blacksmiths these days make a blade with a carbon steel core laminated with an outer layer of stainless steel for a high-performance knife with lower maintenance; this guy was one of the first to develop this technique.
This blade is made from Shirogami steel, called ‘white carbon’ in English, and while it requires care to avoid rust, it gets sharper than just about any other knife steel out there. The rough ‘nashiji’ finish is inspired by the skin of an Asian pear and shows off the hard work and care that goes into making his knives.

About the Shape - Inspired by the profile of a traditional European chef knife, Gyutos are a multi-purpose knife with a slight meat cutting bias. “Gyuto” translates to a “cow sword.” If you want one knife to do it all, This is it. Starting at 180mm, Gyutos can reach the ridiculously long (and awesome) 370mm. For the at-home or professional cook, we recommend a Gyuto which measures between 210mm and 270mm long.

"The Fujiwara Nashiji is my first standless clad carbon steel knife, the blade is razor sharp, sharper than expected. It was recommended by Knifewear as I was looking for something a bit shorter than my 210mm Masashi Shiroshu. This knife is the perfect length and feels amazing in hand, hard to describe in words, you'll have to give it a try. The knife is a bit more rustic on fit and finish and the length will be +/- 195mm but that's what gives it character. Lastly, for those who think you need to purchase the Maboroshi or Denka lines if you're going to go with Fujiwara, you don't, give the Nashiji a try, you won't regret it. "First - The team at Knifewear in Ottawa were amazingly helpful and friendly, as always! Second - the knife... I LOVE the blade. Razor sharp, nicely weighted, and beautifully smithed. The handle? Well, the handle does NOT compare to the magnificent blade. Fujiwara Nashiji’s talent is clearly spent on the steel and not the woodwork. "Upon inspection of the knife that was send to me, I have noticed that on this knife there is a gap between the collar and the handle, the handle was gray and I had to sand it up to get it clean, nashji is poorly executed and I can put a better edge on the two Masahiro knifes (a true work horses of the kitchen) that I have, than the edge on the knife I have received. To anybody who will say “but it is a Fujiwara” I will say, the quality is in the attention to detail."
