The TOJIRO BASIC is a super stripped-down high-performance knife, including only the most basic components needed to blow your mind with every cut. A blade fashioned from VG10 stainless steel ensures crazy sharpness and next-level edge retention, while the super-basic handle is durable,comfortable, and nothing else.While I’m a bit of a magpie for flashy knives, I have to appreciate how unapologetically simple this knife is. With no distractions, you can focus on the joy of cutting and cooking your favourite foods for you and your loved ones. Maximalism be damned, I love this knife!

About the Shape - Underutilized in the western kitchen, the nakiri’s flat blade is meant for the push/pull chopping of vegetables. Since the entire flat edge of the knife touches the cutting board at once, you won't be turning the vegetable into an 'accordion', pieces that are still connected by a thread after you've cut them. The added weight of the blade allows it to fall through food more easily while you chop, so the knife does more of the work for you! How great is that?

Stainless steel is super handy because it doesn’t rust or stain easily like carbon steel. That said, remember it is stain-less, not stain-never. While it is much easier to care for than high-carbon steel, it does benefit from proper use: use it, wash it, dry it and put it away. Always avoid the dishwasher!

USE  

• Only cut food you can bite through with this knife. Hard foods can chip the blade. No olive pits, bones,  lobster shells, woody stems or parmesan rinds. Cutting frozen food is especially bad  because the cold will make hard steel even more brittle. If you wouldn’t chew it with  your own teeth, don’t cut it.  

• Your cutting surface is the biggest culprit of dulling your knife. Use wood. End  grain wood is especially good. Plastic can be fine too, but certainly not glass,  granite or bamboo

• The edge of your knife works best sliding forwards or backwards. Scraping the  knife edge sideways will dull or damage the edge. Instead, use the spine of the knife to move foods across the cutting board. Do not twist the edge or pry with the edge, this is the worst screwdriver you ever bought and these motions will certainly  damage the edge. Listen to the knife! If you can hear the edge making a “tink”  sound on the cutting board, change what you are doing.  

CLEANING  

• After use, wash the knife by hand with regular dish soap, rinse with hot water  and dry by hand immediately. Dishwashers are very bad for knives.  

• Wood handles may dry out over time and exposure to water. Simply treat them  with some food safe wax.

STORING  

• Protect the edge for your safety and to avoid edge damage. A simple blade cover  will do the trick if you keep knives in a drawer or in a travel case.  

• The convenient wall magnet made with wood is a great way to show off your knives.  Be sure to put it back spine first, then roll it onto the blade face. This will keep the  edge from contacting the wood first.  

• The good ol’ counter top block can keep knives at the ready and protected, so  can drawer inserts. Whatever the method, it should keep the edge from touching  anything else.

"I'm by no means a knife expert, however, I was using a Victoriknox knife for quite a while and was super impressed with it's performance. Then my friend showed me the Tojiro selection, and even the basic blows the Victoriknox out of this world. I purchased the Petty and the Nakiri and I'm so happy with them. They are lightweight and fit well in your grip, without slipping. I can slice a piece of paper with no resistance. I will definitely be replacing all my knives with Tojiro eventually. I use them everyday, and the blade is still very sharp (wood boards only). Also, shipping was fantastically fast! Even just before the Christmas holidays."

"This nakiri is excellent. It is my second nakiri and the first authentic Japanese made one. The difference that its origin makes is staggering. Tojiro Basic is simply awesome. 6" blade, 15dps sharpening angle, beautiful, safe, and comfortable Pakkawood half-tang handle with a small pattern of wood layers visible on it under bright light. It is center balanced, its balance point is in a place of the pinch grip, about an inch beyond its handle, so when it is held by its handle alone I can feel its blade heaviness (nit that the knife itself is heavy, it is lightweight). It is clearly more of an Eastern cleaver than a Western chef. I tested its sharpness and it is around and slightly below 150BESS, closer to 130BESS. It slices cigarette rolling paper vertically and even shaves printer paper, so its cutting edge is about 0. 25 micron. Its spine is 1. 7mm thick along its entire length. VG-10 stainless steel at its core, 13Chrome stainless steel outer layers, hardness about 61HRC. It is not 'crazy sharp', but it is definitely wickedly sharp. It does shave hair off my husband's arm and it does shave printer paper. I am very pleased with this knife and I love the store that sells it, they have an awesome YouTube channel with videos about nakiris and their virtues. By all means, highly recommended. It's high-performing stainless steel, a high quality knife. What's not to love!"
